Tortilla Casserole
1 lb. ground beef
1 small onion, chopped
2 cans (8 oz. each) tomato sauce
1 cup water
¼ tsp. garlic powder
1 tsp. chili powder
1 cup grated cheddar cheese
1 pkg. corn tortillas (12)—can use flour
1 small can sliced or chopped olives
Brown meat with onion, then drain. Add tomato sauce, garlic, and chili powder. Simmer 20 minutes on low heat, covered. Alternate in a 2 quart casserole dish: tortillas, meat mixture, cheese, and olives (about 2 times). Bake at 350° for 20 minutes, covered. Serves 4-6.
For lunch we had an all-in-one frozen chicken stir fry from Aldi. It included chicken, veggies, and sauce. It really wasn't too bad and there wasn't a lot of junk in it and it cooked up in 15 minutes.

Mom made a good rice dish last night. Leftover chicken and rice and something else, with peas. It was really good.
