night out

We went to a Thai restaurant for dinner. The food is very sweet. Lots of fruit, coconut etc. in their main dishes. I had Pad Thai. The noodles were like linguine but a little chewier.

When I went to my friend's house on Saturday night, we were going to have burriots, but she didn't have any refried beans, so Ashley thought of something good: Rice, hamburger, I think, homemade salsa, I think that was it. All mixed together, and we 'toasted' tortillas on the stove. It was really good.

Last night, Mom made a really good bean and rice dish. It was surprisingly really good, I even had seconds! I'll ask Mom for the receipe and send it to you so you can post it because it really was good.

Tonight for dinner, Mom made potato soup with canned potatoes; boiled cabbage, which I wasn't a huge fan of. Well I did eat the leaf and both Mom and Dad said that the white part is better, but I said I'd try it some other time. We also had Mom's homemade bread with butter and wild berry zinger herbal tea. It was a very wonderful dinner on this cloudy, rainy, sleepy, St. Patricks Day!!!

I forgot! Dessert!!! Mom made 'mini apple pies.' She cored green apples, made a brown mixture of some kind, poured it in there, made a crust and put it on top of the apple, then baked it...It was delicious!!! You can ask Mom for the complete recipe, but it was delicious, with Breyer's Vanilla ice cream. Mmm mmm good!!! :)
